- Proven experience in Mess management, Kitchen Management
Implement quality control measures to uphold the highest standards of food quality, taste, and presentation.
Preparation and compilation of Mess Budget, and proposal for event management expenses.- Initiate Cost Control measures while ensuring quality, must ensure expenses remain within budgetary constraints as well.
Maintaining income and expenditure statements and proposing necessary measures.
- Reviewing of rate contracts as per market standards.
Identifying the needs of required manpower as per the existing setup.- Allocation of manpower/ duty roster as per defined activities in the department.
Periodic review of manpower, job rotation, job enlargement, performance review, skill development, and training.
- Initiating employee welfare/employee engagement activities.
Supervise all aspects of the central kitchen operations, including food preparation, cooking, and packaging.- Coordinate with kitchen staff to ensure adherence to standardized recipes, portion sizes, and quality standards.
Implement best practices for food safety, sanitation, and hygiene to maintain compliance with regulatory requirements.
- Monitor inventory levels of ingredients and supplies, and place orders as necessary to ensure uninterrupted production (Minimum Stock maintenance for 15 days for dry ration).
Ensure deep cleaning, pest control, switch off all the lights, fans, equipment's etc at the time of closing of Mess (Daily).- Collaborate with the culinary team to develop menus that meet the nutritional needs and preferences of our clientele.
Regularly review and update menu offerings based on customer feedback, dietary trends, and seasonal availability of ingredients.
- Ensure menu diversity and accommodate special dietary requirements or restrictions as needed.
Introduction of new innovative dishes/foods in the present menu to add variety with appropriate approvals.- On festive occasions, dcor, menu and ambience to be varied

Schedule kitchen staff effectively to meet production targets while maintaining labour cost efficiency.
- Conduct regular performance evaluations and provide training and coaching to improve staff skills and efficiency.
New Technology integration and adoption of cost-efficient technology/equipment.- Implement quality control measures to uphold the highest standards of food quality, taste, and presentation.
Conduct regular inspections of food preparation areas, equipment, and storage facilities to ensure cleanliness and compliance with sanitation standards.
- Address any issues related to food quality or safety promptly and take corrective actions as needed.
Ensure periodic lab testing (Raw Materials, Milk Products, Spices) from external agencies and develop internal quality checks.- Maintaining all records of mess functions as per the prescribed formats.
Maintain and submit daily reports as per the prescribed formats/annexure.
