Job Summary
Needs to have a wealth of prior knowledge running and developing for pastry & chocolate kitchens.The chef will be tasked with constantly mutating the current variants to optimize kitchen operations and in developing seasonal variants.
Core Responsibilities:-
Accountable for overall success of the daily pastry/chocolate kitchen operations. Works to continually improve guest and employee satisfaction. Supervises all pastry/chocolate areas to ensure a consistent, high quality product is produced. Must ensure sanitation and food standards are achieved. Areas of responsibility comprise overseeing all pastry/chocolate preparations.
Operational & Administrative Responsibilities:-
Hire, train and supervise CDPs and commis in conjunction with sous chef.
Should carry an experience leading a team of 10-12 chefs including sous, CDP and commi chef.
Communicate performance expectations in accordance with job descriptions for each position and monitor the same from time to time.
Plan efficient kitchen operations to keep up with the demand of the orders
Monitor the team in following SOPs provided by the company and optimize them for efficiency.
Review staffing levels to meet operational and financial objectives.
Monitor daily and weekly requirements of raw material orders by the team.
Monitor the operations of the kitchen to make sure food wastage is minimized
Oversees day-to-day operations, ensuring the quality standards are meeting the expectations of the customers on a daily basis
